In Japanese culture, the santoku is the kitchen knife. It is a single blade that can be used for three (”san”) things: vegetables, fish and meat. Today, everyone is familiar with it, and it is highly appreciated for its versatility: it is a sure value.
The VG-10 steel blade is “san-mai’ (three layer). This method makes the heart of the steel harder. VG-10 is a high-tech alloy that is now widely used for its technical properties. Compared with classical stainless steel, it resists wear and strain better, and the razor edge remains sharpened longer. This steel is also very resistant to rust and stains.
This knife is finely finished. The blade is well sealed at the handle and we can see resin at the joint to prevent humidity from entering. The handle is made from stained, varnished magnolia wood, and is carved to fit the palm. This makes handling very successful and pleasant.
