A sujihiki is a knife for slicing. It is useful for cutting up large pieces of meat or fish. The thin blade provides an exact, fine cut, and the edge has been sharpened 50/50 for use with either the right or the left hand.
The VG1 steel from Takefu that has been used is a stainless steel with a high carbon content to increase hardness and durability.
The handle is made from Pakkawood.
