In Japanese culture, the santoku is the kitchen knife. It is a single blade that can be used for three (”san”) things: vegetables, fish and meat. Today, everyone is familiar with it, and it is highly appreciated for its versatility: it is a sure value.
Mr. Fujita uses suminagashi in VG-10 for this blade. The hard core is covered with a damask layer, which makes it very beautiful. VG-10 is a high-tech alloy that is now widely used for its technical properties. Compared with classical stainless steel, it resists wear and strain better, and the razor edge remains sharpened longer.
The magnolia-wood handle is “D-shaped” to prevent it from slipping in the hand. It is painted black with red marbling, and then varnished for protection. This very successful finishing truly makes this petty with its contrasting-steel blade beautiful. It is a “must” in this range.
