(...) A deba is a thick, heavy, traditional single-bevel knife used for fish. It makes it possible to slice off the head and separate the flesh from the backbone in one clean, precise stroke. It is also used for chopping, effortlessly, thanks to its weight.
This blade is made from shirogami 2, “No. 2 white steel,” from Hitachi. This is the non-stainless steel of purists, recognized for its qualities and used by the greatest blacksmiths for the best knives. It will take on a natural patina with use, and care must be taken to always dry it well to prevent rust. The alloy contains more than 1% carbon, and the composition is pure, finely structured,
which results in an extremely keen edge that is easy to sharpen.
This large, heavy, well-made knife facilitates cutting large fish and chopping thanks to its efficient edge.
This model has a handle in magnolia wood painted gold, with white marbling.

IMPORTANT: The 90/10 bevelled blade is for right-handed use only.
The blade requires special care to prevent rust.
