In Japanese culture, the santoku is the traditional household kitchen knife. It is a single blade that can be used for three (”san”) things: vegetables, fish and meat. Today, everyone is familiar with it, and it is highly appreciated for its versatility.
The suminagashi blade in AUS-10 has beautiful contrasting motifs. It has been polished to give it a brilliant, luminous aspect, which makes it especially attractive. The stainless steel used contains around 1% carbon along with molybdenum and vanadium to make it harder and stronger.
The handle is made from magnolia wood with a ferrule of real buffalo horn. It has been given an octagonal shape to provide a good grip. The blade is “cemented” to the handle so that it is perfectly fixed in place and humidity is prevented from infiltrating.
