The gyuto, also known as a “chef’s knife,” or “cook’s knife,” is indispensable in Western cuisine because it is perfect for many different tasks: chopping, slicing, cutting vegetables and meat. Its heel is broad for cutting on a board, and it has a fine point for precision work. The length can vary, in general, between 18 and 30 cm, depending on the need.
The suminagashi blade in AUS-10 has beautiful contrasting motifs. It has been polished to give it a brilliant, luminous aspect, which makes it especially attractive. The stainless steel used contains around 1% carbon along with molybdenum and vanadium to make it harder and stronger.
The handle is made from magnolia wood with a ferrule of real buffalo horn. It has been given an octagonal shape to provide a good grip. The blade is “cemented” to the handle so that it is perfectly fixed in place and humidity is prevented from infiltrating.
