The blade is san-mai, sharpened 50/50, in VG-10, superior stainless steel. Misuzu has innovated with this trapezoidal santoku. The tip of the blade is pointed and the heel comes back towards the handle, which blocks the finger and provides a very good grip. This is an all-purpose knife, for trimming vegetables, or cutting meat or fish. Its 15-cm length makes it very versatile.
The handle is made from honoki wood embellished with an inscription. It has been given a ā€œDā€ shape to prevent it from slipping in the hand. The special feature of this model is that it has been finished with natural urushi lacquer, which gives it cachet, as well as greater resistance to and protection against stains.
It is a very beautiful introduction to Japanese blades.
