The blade is san-mai, sharpened 50/50, in VG-10, superior stainless steel. Misuzu has innovated with this trapezoidal santoku. The tip of the blade is pointed and the heel comes back towards the handle, which blocks the finger and provides a very good grip. This is an all-purpose knife, for trimming vegetables, or cutting meat or fish. Its 15-cm length makes it very versatile.
The handle is made from honoki wood well sealed to the blade with an anti-moisture coating. It has been given a āDā shape to prevent it from slipping in the hand, and it is embellished with an inscription.
It is a very beautiful introduction to Japanese blades.
